Low Carb Brekkie

Posted by kirsty morrison on

Totally love an omelette for one for brekkie. Here I've gently caramelised Duchy of Cornwall Organic Onions in Biona Organic Coconut Oil Cuisine (no coconutty aroma). Then added batons of courgettes and softened those through. Whisked up some local A'Chleit Beach free range eggs with a dash of milk and a good pinch of Mediterranean Medley by Herbs Hands Healing, and poured into the omelette pan for a minute. Topped with grated Mull of Kintyre cheese and popped under the grill. Now I adore Mull of Kintyre cheese but it's very mature and rather bitter in this recipe so the solution was a light sprinkling of our Aromachefery Infused Sea Salt in Bay Laurel which lends a scrumptious aroma which is definitely naturally sweetening! Utterly divine. Served of course with a very strong americano. For me it has to be Peruvian Machu Picchu by Cafe Direct. Way to go! We're very good using Sea Salt from the Highlands of Scotland which has been extracted using entirely solar means (poly tunnels) - no electricity applied! We've got our new packaging in for our gourmet range and just waiting for pics back from the photographer to show these all off!
