In classical ancient times the bay laurel leaf represented Victory and Status and is thought by some to have been the original crown.The hint's in the name 'Laurus Nobilis'.
For me it's one of my favoured essential oils to use in cooking. Unlike the faintly musty aroma of the dried leaves of bay which we traditionally use in cooking, the essential oil captures the floral aroma of some of the key constituents of the leaf. I adore it with fish. A few grains of our infused bay sea salt concentrate on a griddled scallop transforms the dish and two drops of our infused gourmet oil concentrate of bay in a pot of mussels is incredible.
